Tailgate Recipe - Orange Hot Chocolate

With snow flurries last night across the state of South Carolina and really, really cold temps that make you just want to stay in bed under layers of blankets all day long, we think hot chocolate is just what the doctor ordered for Thursday's Clemson vs. Georgia Tech tailgate menu. Make your hot chocolate solid orange with a little food coloring by following this simple recipe...


Orange Hot Chocolate

Ingredients:
12 oz. white chocolate
8 cups milk
1 tsp vanilla
2 drops orange food coloring
Whipped cream and orange and purple sprinkles

Directions: Chop white chocolate and place in a bowl. Heat milk in saucepan over medium heat until in bubbles. Pour milk over chocolate. Stir until chocolate melts. Whisk in vanilla and food coloring, then continue to whisk until light foam forms on surface. Pour in mugs or cups and top with whipped cream and sprinkles. Add a half ounce or ounce of Baileys to each serving for an adult flavored hot chocolate. Drink responsibly.

Tailgate Recipe - Cracker Jacks

Take me out to the ball game, Take me out with the crowd......Buy me some peanuts and cracker jacks....

Mmm...crackerjacks!

Why not make your own to take with you to your baseball tailgate?

Crunchy Caramel Corn

Ingredients:
4 tablespoons butter, plus a little more for the baking sheet
10 cups plain unsalted popped (from 1/2 cup kernels or a 3.3 oz bag microwave popcorn) popcorn
1 cup cashews, coarsely chopped (optional)
1/2 cup packed light-brown sugar
Coarse salt
 
Directions
  • Preheat oven to 300 degrees. Butter a large rimmed baking sheet; set aside. Place popcorn in a large bowl; if using cashews, add to bowl and toss to combine. Set aside.
  • In a small saucepan, bring butter, sugar, 1/8 teaspoon salt, and 2 tablespoons water to a boil, stirring constantly. Working quickly, drizzle popcorn with sugar syrup, and toss.
  • Spread popcorn evenly on prepared baking sheet. Bake, tossing occasionally, until golden and shiny, about 40 minutes. Transfer hot popcorn to parchment-paper-lined baking sheet; let cool. **Store in airtight container up to 1 week.

Tailgate Recipe - Peanut Butter Pretzel Bites

With the week I'm having, I need a sweet pick-me-up...and I'm seriously craving something sweet and salty - the best combo. These Peanut Butter Pretzel Bites look like just the prescription I need and look so easy to make. Yum! These would be great at any Clemson tailgate, or perhaps a sweet treat for your Valentine next month!


Peanut Butter Pretzel Bites

Ingredients
1/2 cup creamy peanut butter
1/4 cup, plus 1 tbsp confectioners sugar
1 tablespoon room temperature unsalted butter
1 cup pretzels, crushed
5 ounces melted milk chocolate

Directions: Stir together peanut butter, confectioners sugar, unsalted butter, and the crushed pretzels. Roll into 1″ balls. Freeze for 30 minutes, or until firm. Melt chocolate over low heat. Dip balls into melted milk chocolate, and refrigerate until set.

Tailgate Recipe: Quick & easy snacks to make on the go

One fact about Clemson fans is that we travel for games - whether we're driving across state for home games, or we're driving to an away game or to a bowl game, we will make the long trips to see our Tigers play.

However, traveling makes putting together a tailgate quite tricky. You're limited on time, utensils, etc. And sometimes you need the night before to pack, not precook a ton of food. And of course, not all hotels are created equal - we don't always get the luxury of microwaves and mini fridges.
Sure, it's easy enough to swing by Zaxby's and get a giant chicken finger party plate...or snag a tray of subs, cheeses, or vegetables and dip from a local grocery store.

But here are some quick, easy, and foolproof recipes that you can whip up in minutes in your hotel room or at the tailgate itself. Some of these are so easy, you can get your kids to help! Just pick up the ingredients at a local grocery store along with any supplies you need like paper towels, paper plates/bowls, and plastic serving ware.

Creamy Cinnamon Celery

1 large celery stalk, cut into smaller sticks (most grocery stores carry pre-cut, pre-washed celery sticks)
1 Tbsp Laughing Cow Cream Cheese
1 packet Splenda
Ground Cinnamon

Directions: Mix together Cream Cheese and Sweetener. Spread on celery sticks and sprinkle with cinnamon on top. {via}

Directions: This is an easy classic snack you probably grew up with... Spread peanut butter into celery crevices and top with raisins.

Snack Mix Bar

Directions: Instead of buying a prepackaged trail mix, purchase several different bite sized items (look for items on sale or buy in bulk from Sam's or Costco). Here are some ideas: Various dried fruit, chocolate chips, mini marshmallows, teddy grahams, pretzel sticks, Chex cereal, sunflower seeds, different kinds of nuts... Then purchase a box of sandwich-size Ziploc bags.

Set out each individual bite sized snack in its own bowl in a buffet-like line with plastic spoons in each bowl. Then let your tailgate guests grab a plastic bag (or bowl) and create their own snack mix. The Ziploc bag makes it easy to tote around and snack while at the tailgate -- and it makes it even easier to seal and stick in your purse to enjoy later during the game for a third quarter snack!

Mini Pimento Cheese & Egg Salad Sandwiches

Directions: We are willing to bet that a lot of you serve these sandwiches at your home game tailgates and this easy snack might be a little obvious, but it's always a crowd pleaser and so easy to make in a time crunch. Most grocery stores carry (we recommend Publix!) pre-made packages of fresh pimento cheese and fresh egg salad.

Buy a bag (or two!) of dinner rolls (Yum!). Using a plastic knife, slice open a roll and spread a good amount of Pimento Cheese inside. Repeat with more rolls until you have the desired amount of pimento cheese sandwiches, then repeat the same process with the rest of the rolls using egg salad. In no time you'll have a full plate of mini pimento cheese sandwiches and mini egg salad sandwiches.

Fiesta Ranch Dip

1 16 oz (or 24 oz - depending on how much you need) container of sour cream
1 packet of Hidden Valley Fiesta Ranch mix

Directions: Open sour cream container and empty contents of Fiesta Ranch mix packet into sour cream; stir with a spoon until well mixed. Voila! That's it...a great dip to serve with a bag of regular potato chips or vegetables.

Itty Bitty Turkey Sandwiches

1 box of whole grain reduced fat crackers
1 package of hearts of romaine lettuce
1 to 2 tomatoes
1 package of Turkey deli meat

Directions: Here's a spin on the traditional sub sandwiches you serve at your tailgate. These bite-size cracker sandwiches are as cute as they are delicious. With two crackers as your 'bread', create mini turkey sandwiches. Mix it up and get a variety of meat in addition to the turkey. Feel free to add slices of cheese or avocado. {via}

Happy Hour - Tiger Tangerine Margarita

TGIF! Are you as glad as I am that this rainy week is over? Try out this refreshing adult beverage to celebrate and 'pin' the recipe to use for a future tailgate or game viewing party. P.S. Drink responsibly...


Tiger Tangerine Margarita

3 ounces freshly squeezed tangerine juice

2 ounces silver tequila

1 ounce triple sec

Directions:
  1. Salt rim of glass. Rub rim with a piece of citrus and dip into a shallow plate filled with coarse salt or for a blingy rim, dip rim of glass into blue curacoa, then dip into salt
  2. Fill your cocktail shaker with ice and add all ingredients and shake it.
  3. Strain into a glass filled with ice and garnish.
Tips: You can salt rim up several glasses in advance if you’re planning on making several margaritas. If you don’t like salt, try (purple!) sugar…

Clemson jelly bean Easter centerpiece

How cute (and easy) is this jelly bean Easter centerpiece? Use fake flowers, or use real flowers by placing a smaller vase with water in the middle and filling in the gap between the two vases with jelly beans. Switch out the green jelly beans with purple jelly beans -- or a combination of orange and purple.

Tailgate Recipe: Egg Salad and Cheese Quesadillas

What to do with all of those leftover dyed Easter eggs in your fridge? How about trying out a new egg-cellent recipe. :)

We found this interesting (and yummy) sounding recipe from website Kalyn's Kitchen. Might not exactly work for a tailgate, but these would be delicious for a game viewing party at home.

**And just a friendly reminder, eggs that have been unrefrigerated for more than 2 hours are probably not be safe to eat. However, hard-boiled eggs will keep safely in the refrigerator for up to one week.

Egg Salad and Cheese Quesadillas
(makes 4 quesadillas)

4 hard boiled eggs
4 small size flour tortillas ( can substitute with whole wheat or low carb
tortillas if desired)
olive oil or non-stick spray for spraying tortillas and pan
2 tsp. Dijon mustard
2 tblsp mayo or light mayo
1 1/2 tblsp finely chopped green onion
1/2 tsp. Spike Seasoning (optional, or use other seasonings of your choice)
salt and fresh ground black pepper to taste
1/4 cup finely grated cheese (suggestion: the grocery store's prepackaged Mexican blend of four cheeses)

How to Prepare
Peel and cut hard boiled eggs into pieces about 1/2 inch. Mix eggs with Dijon, mayonnaise, chopped green onion, and Spike seasoning. Season to taste with salt and pepper.

Spray or brush olive oil on frying pan and on bottom side of tortillas. Spread egg salad mixture on half of each tortilla, not going clear to the edge so it doesn't fall out while quesadillas are cooking. Top egg mixture with 1 tblsp grated cheese, then fold the tortilla to make a half-moon shaped quesadilla.

Heat frying pan over medium-high heat, then cook quesadillas about 3-4 minutes per side, or until cheese is melted and they are slightly browned. Serve hot, with salsa on the side if desired.

As you may have heard, this weekend's home game versus NC State will be one of those lovely NOON games - which means you will be up bright and early, tailgating and sipping mimosas.

We thought we'd bring back some of our favorite tailgate breakfast recipes to help you prepare a delicious breakfast spread at your Clemson tailgate for your family and friends...bon appetit!

Clemson Breakfast Tailgate Recipes

French Toast Casserole - a Clemson Girl favorite submitted by one of our readers! It tastes exactly like delicious french toast, but is baked as a casserole. Served with regular syrup or you can try flavored syrups like strawberry and blueberry. Yummy!

Unbelievable Good Fruit Dip
- Who doesn't like fruit for breakfast? Try out this incredibly easy to make fruit dip to compliment your fruit at your tailgate.

Cheesy Biscuits - One of my fave comfort foods - watch a video of eye-candy Chef Curtis Stone whip up these delicious cheesy biscuits. He walks through the recipe step-by-step, making these biscuits look super easy to make...although you may be distracted by the handsome chef. :)

Tiger Breakfast Bread - Another tailgate breakfast recipe submitted by one of our readers. This cinnamon and nut bread is so tastey and is guaranteed to be a new favorite at your tailgate. Perfect for a cool Fall morning with warm coffee.

Sausage Swirls - Add a little spice to your tailgate menu with these sausage swirls which are very easy to make. Prepare them the night before and pop in the oven for 15 minutes before you leave for the game. Mmmmm.

Not your typical Mimosa - And if you're interested in trying a twist on your typical Mimosa, try using Passion Fruit juice instead of orange juice. So...half a flute of Passion Fruit juice, and fill the other half with your favorite champagne - gently stir. For added flare, slice up an orange to decorate the rim of each flute!

Tailgate Recipe: Football inspired tailgate snacks

Try one of these fun 'football themed' recipes at your Clemson tailgate this weekend. They look very yummy!

Cheese Ball Blitz
Ingredients:
2 packages (8 oz.) cream cheese, softened*
1 package (8 oz., 2 cups) shredded sharp Cheddar cheese
1 tablespoon chopped pimento
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped onion
2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1/4 teaspoon cayenne pepper or hot pepper sauce
Dash salt
Keebler® Town House Toppers® Original Crackers
walnuts for decorating (optional)

Directions:
  • In large bowl combine cream cheese, Cheddar cheese, pimento, green pepper, onion, Worcestershire sauce, lemon juice, cayenne and salt. Mix well.
  • Shape into a football.
  • Refrigerate for 4 to 6 hours.
  • Decorate with walnuts and pimentos, if desired, and serve with crackers.
*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.

Cheez-It™ Game Day Guacamole
Ingredients:
2 cups coarsely chopped onion , divided
2 large jalapeño peppers, seeded and cut into pieces , divided
6 cloves garlic, peeled , divided
8 medium ripe avocados, pitted, peeled and chopped , divided
2 cups peeled, seeded and chopped tomato , divided
2 tablespoons lemon juice or lime juice , divided
1 teaspoon salt , divided
1/2 teaspoon liquid pepper sauce , divided
1 cup sour cream*
Sunshine® Cheez-It® Original snack crackers OR
Sunshine® Cheez-It Duoz Sharp Cheddar and Parmesan

Directions:
  • In food processor bowl combine 1 cup of the onion, 1 of the jalapeño peppers and 3 cloves of the garlic. Cover and process until finely chopped.
  • Add 4 of the avocados, 1 cup of the tomato, 1 tablespoon of the lemon juice, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper sauce to the onion mixture.
  • Cover and process until nearly smooth, stopping machine occasionally to scrape down sides. Transfer to large bowl.
  • Repeat steps 1 and 2 using the remaining onion, jalapeño pepper, garlic, avocados, tomato, lemon juice, salt and pepper sauce. Stir into guacamole mixture in bowl.
  • Evenly spread guacamole mixture into 15 x 10 x 1-inch pan. Smooth the top.
  • Pipe sour cream on top of guacamole for yard lines and end zone. Arrange SUNSHINE CHEEZ-IT ORIGINAL crackers on top of guacamole for end zone. Serve with additional crackers.

Tailgate Recipe: Unbelievably Good Fruit Dip

Only 7 weeks until the first Clemson home football game! The first game doesn't start until 3:30pm which leaves lots of time to tailgate beforehand - but also when it's typically the warmest.

One tailgate snack I love on the hot gamedays is fruit - especially fruit that's been left in a cold cooler all morning long. And I also love sweet and creamy dips to compliment the fruit.

Here's a yummy (and super easy) recipe to try, compliments of allrecipes.com:

Unbelievably Good Fruit Dip

Prep time: 5 min
Ready In: 3 hrs, 5 min.
Servings: 20 (about 2 cups)

Ingredients:
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 teaspoon fresh lemon juice

  • In a medium bowl, blend cream cheese, sweetened condensed milk and lemon juice.
  • Cover and chill in the refrigerator at least 3 hours before serving (Clemson Girl: Or in your cooler on ice while you drive to Clemson!)

Clemson dresses are so sweet

One of our readers sent us this photo a while back as a tailgate idea - how cute (and yummy) is this adorable dress cookie? Not only would I eat this, but if it was a real dress, I would totally wear it on gameday! :)

Just bake sugar cookies as usual - and form the dough into a bell or dress-like shape, bake and decorate. This would be a fun activity to get your little Clemson Girls involved in. I'm envisioning an entire cookie wardrobe of gameday dresses. :) Incorporate orange and purple icing, sprinkles, candies, etc. Yum!

Clemson Ladies Dining

This is probably one of my favorite photos from this past football season, taken at the Clemson vs. UVA game back in November... these ladies were so friendly and were so excited when I approached them to take their picture. I think we took three or four shots until they felt the picture was just right. :)

Check out the setup...crystal wine glasses, an adorable table cloth, a candelabra, real plates, real silverware... now that's classy tailgating! Love it!

Orange and Purple Cauliflower for your next Clemson Tailgate

A fellow Clemson alum, Joan Breitenbruck Stepleton (Chemistry, Secondary Education double major, class of 2003) sent me this picture of orange and purple cauliflower. She saw this at a farmer's market in Denver. Wouldn't it be fun to have orange and purple cauliflower on your vegetable plate at your Clemson tailgate? :)

The man selling it said that the orange cauliflower grows wherever white can grow - so surely there must be orange cauliflower in South Carolina. Does anyone know where to find some in South Carolina?

Decorate Your Tailgate - Inexpensive accessories for your Clemson tailgate

Whether you set up a tailgate for two or for twenty, it's always fun to put a little extra effort into the decor - having a festive orange and purple tailgate setup will put anyone in the Clemson spirit. I was reading the August issue of RealSimple magazine last night, and found out about a Web site for party decor called PlumParty.com. I decided to check it out and found a lot of cute items and ideas that would make any Clemson tailgate stand out. These items would also make fun 'thank you for feeding me all season' gifts for the hosts of tailgates that you frequent.

First, stock up your tailgate with orange and purple plastic cups. PlumParty.com has 24 packs of 9 oz. cups made of heavy duty quality plastic for only $4.25. Scroll a little down on their site below the cups and you'll find links to other serving accessories in the identical color, like purple and orange napkins in packs of 50 for only $4.25. Pack a permanent marker and make sure you write everyone's names on the cups so they can use it the entire day - makes for less waste. Or buy some cheap orange or puple ribbon at Walmart and glue them around the bottom, middle, or top of each cup to create an additional flair (floozy cup?) and also help your tailgaters identify their cups.

PlumParty.com also offers some adorable placemats to jazz up your tailgate. Use a solid purple tablecloth and offset your spreads of food by placing them on these funky orange and white placemats. Or, if you've got an orange tablecloth, try out these summery, purple tiki placemats that are 50% off their original price - so you get a pack of 4 for only $11! Place one under your utensils, another under your hot dips, and another under your sweets and desserts - it adds a little interest and depth to your table. Or place them together in a row down the center of your table to make your own table runner. And you're not limited to use them just for tailgating - they'll also come in handy at home.

Add some fun to your tailgate and try out these inflatable football baloons. You'll get a set of 10 for $38.00 - plenty for the entire football season! Stop by a gift store, grocery store, or dollar store on your way into town and get these inflated. Tie them with gift ribbon to your tailgate tent. Not only do they make for fun decorations, but it will make it easier for your friends to find your tailgate... "Look for the floating footballs".

Finally, during the October and November games, the wind picks up quite a bit - how often are you scrambling after your paper plates? putting keys on top of your napkins to keep them from blowing away? Why not purchase some adorable photo frame paper weights. Print out cute pictures of your kids in their Clemson attire, or of you and your friends from past Clemson games, or even pictures from your Clemson glory days... and put them into this paper weight frame. You only need three or so - spread them out on your table to keep your tablecloth from blowing up. Put one on your napkin stack, another on your plates. These can be reused and pictures changed out the entire season!

Finally, I wanted to share another tailgate-must accessory. Plastic plates with built in cup-holders! You can find these at most party supply stores (Party City), or purchase them online, like from this Web site, cateringsupplies.com, who offers 16 of the plates in various colors for only $8.35. Unfortunately, this Web site doesn't have orange or purple... but white would work! Your tailgaters will love the convenience of these.
