Tailgate Recipe: Taco Tortilla Rollups

Tortilla rollups are always a crowd pleaser at tailgates. Try this simple recipe for one of your tailgates this Fall - make the night before, refridgerate overnight, then cut and serve at the tailgate!

Taco Tortilla Rollups

2 (8 oz.) packages cream cheese, softened
1/2 cup sour cream
4 green onions, chopped
1 (1 oz.) package taco seasoning mix
14 (10") flour tortillas

Directions:

• Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended.
• Spread a thin layer of the cream cheese mixture onto each tortilla.
• Roll each tortilla tightly to create a long tube. Spread more of the cream cheese mixture on the edges of the tortilla to seal.
• Place rolls in the fridge overnight.
• Before serving, cut each roll into 1-inch pieces and serve with salsa for dipping.

Clemson vs. Auburn Tailgate of the Week - Kim H. of Matthews, NC

Last week we held a giveaway contest to find the Tailgate of the Week for the Clemson vs. Auburn home football game. Lucky winner Kim. H of Matthews, NC won a free professional photo shoot from Lime Green Room photography of her and her family's tailgate this past Saturday. Kim is also receiving a CD with all of the unwatermarked images with printing rights for free.


Rachael of Lime Green Room Photography and I really enjoyed hanging out with Kim and her family at their tailgate during the shoot. They were all very nice people and you could see the tradition of Clemson spirit being passed down the generations of the family.

Clemson tradition runs deep in this family. Kim graduated from Clemson in 1988 with a BS in Management, her husband Jon graduated in 1989, and her brother Brian graduated just a few years earlier in 1985. Kim's brother and husband were both members of Beta Theta Pi fraternity and she was a Kappa Kappa Gamma as well as a little sister to their fraternity.

While Kim and her brother were at Clemson, her parents had season tickets and tailgated for every game. As students, Kim and her brother brought friends to their tailgate each game. Even after graduation, the family continued to come to Clemson games and tailgate each year.

So it's no surprise that Kim's children and her brother's children have grown up loving Clemson football as well. Kim's daughter was 4 weeks old at her first Clemson game. One of Kim's favorite pictures is of her daughter when she was one year old sitting at a tailgate in her Clemson Cheerleader outfit.

Kim's brother, sister-in-law (also Kim), niece (Andrea), nephew (Aaron) along with Kim's husband, daughter (Aly) and son (Jacob) make numerous trips to Clemson each year and turn it into a mini-family vacation by staying the entire weekend.

Now that her nephew Aaron is a sophomore and her daughter Aly is a freshman at Clemson, Kim and her husband and her brother and his wife are continuing the same tailgate traditions as her parents. Now Aaron and Aly are bringing their friends, roommates, boyfriends and girlfriends by the tailgate to enjoy the pre and post game festivities.


Kim also keeps in touch with her and her husband's past college friends, and the friends always make sure to come by the tailgate when in town for a game. Kim and her sister-in-law coordinate the tailgate food for each game and always try to make sure they have plenty extra for all who come.

Caroline's Tiger Pause: 2010 Clemson Team Analysis (plus a giveaway!)

Yay Clemson Girls!! Football season is finally here. Do you know how every year there is a team that flies under the radar? A team that many pick to have a good but not great season and that team turns out to have an extra special year and be one of the top teams in the country? Well this year that team is Clemson! I believe that this will be an extraordinary season and I cannot wait for 3:30 Saturday to kick our season off.

Football is won in the trenches—plain and simple. This year prognosticator Phil Steele ranked Clemson’s defensive line second best in the country and our offensive line seventh best in the country. We have enjoyed a great defensive line for several seasons now but this is without a doubt the best offensive line we have fielded in years. If these two units can stay relatively injury free this season Clemson will have an excellent year.

Many analysts consider the big question marks on the 2010 Tigers to be our linebackers and receivers; however I feel very confident in these two units. The linebackers have significantly improved over last year’s unit and the wide receivers, while young and untested, are extremely talented. They also have a terrific quarterback throwing balls to them. Make no mistake, Tajh Boyd will be an amazing Quarterback at Clemson, but having Kyle Parker return was huge! His first season found him a freshman All-American and leading his team to the conference championship—I cannot wait to see what his second season brings.

The other question that has been asked a million times this off season is how does Clemson replace CJ Spiller? The answer is you don’t. CJ was a once in a lifetime player and you are not going to find any one player to do everything he did as well as he did. But our running game is in excellent shape. Jamie Harper and Andre Ellington will be sharing starts and carries and they will be one of the most explosive one two punches in college football. They will both have break out seasons this year. And backing them up is Roderick McDowell, who has had an outstanding spring and summer. Another player to watch out for this season is Tight End Dwayne Allen. He will leave Clemson as the best Tight End in school history and will be Kyle Parker’s primary target.

Defensively we are loaded this year. As I stated earlier the linebacking corp is much improved and our defensive line and secondary are among the best in football. We return starting All-American safeties DeAndre McDaniel and Rashard Hall. Having McDaniel and tackle Jarvis Jenkins turn down NFL opportunities was huge for our defense. DaQuan Bowers is going to have a sensational season this year. Another name to look out for is Corico Hawkins. He is young but a devastating hitter and a real leader on this defense. Look for him to have a break out sophomore season.

The kicking unit is the big cause of concern for me—if they can be a real asset this year the sky is the limit for this team. Punter Dawson Zimmerman has had an outstanding camp-if he can carry that over into the games he will be putting our defense in great situations. The kicking battle was finally won by walk on Chandler Catanzaro. He has been money in practice from 45 yards and has the leg to kick 50. Seeing consistency in the kicking game this year would guarantee a special year at Clemson.

North Texas brings a talented squad and a great running back to Death Valley this Saturday, but the next two games should be won handily. We should have the starters out by half time and the second and third units should get two halves of quality snaps. I think Dabo has one of the great secrets in college football this year and I cannot wait to watch it revealed! Go Tigers!

Tailgate Recipe: Unbelievably Good Fruit Dip

Only 7 weeks until the first Clemson home football game! The first game doesn't start until 3:30pm which leaves lots of time to tailgate beforehand - but also when it's typically the warmest.

One tailgate snack I love on the hot gamedays is fruit - especially fruit that's been left in a cold cooler all morning long. And I also love sweet and creamy dips to compliment the fruit.

Here's a yummy (and super easy) recipe to try, compliments of allrecipes.com:

Unbelievably Good Fruit Dip

Prep time: 5 min
Ready In: 3 hrs, 5 min.
Servings: 20 (about 2 cups)

Ingredients:
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 teaspoon fresh lemon juice

• In a medium bowl, blend cream cheese, sweetened condensed milk and lemon juice.
• Cover and chill in the refrigerator at least 3 hours before serving (Clemson Girl: Or in your cooler on ice while you drive to Clemson!)

Clemson Ladies Dining

This is probably one of my favorite photos from this past football season, taken at the Clemson vs. UVA game back in November... these ladies were so friendly and were so excited when I approached them to take their picture. I think we took three or four shots until they felt the picture was just right. :)

Check out the setup...crystal wine glasses, an adorable table cloth, a candelabra, real plates, real silverware... now that's classy tailgating! Love it!

Tailgate Breakfast Recipe: French Toast Casserole

Last week I posted on our Facebook page that I was looking for some more breakfast recipes for tailgates - our blog has gotten a ton of hits from searches on the Internet looking for tailgate breakfast recipes. Clemson alum Beverly Garrett-Thompson ('94) answered the call. She emailed me with a breakfast recipe that I can't wait to try out - it's a spin on one of my favorite breakfast meals of all time -- French Toast! I'm going to try this out - and if you do, send us pictures! This would be perfect for your tailgate in Clemson this weekend!

Hey Clemson Girl!

Here is a wildly popular breakfast tailgate dish I have made several times over the past few years. It was featured in my local paper, The Augusta Chronicle in 1998 or 1999. I made it for the first time for a morning tailgate, and it has been a huge hit ever since. So many people ask for the recipe, I finally saved it as a file for easier sharing :-) It tastes exactly like a delicious french toast, but is baked as a casserole!! I serve it with regular syrup and also flavored syrups like strawberry and blueberry.

I am a Clemson Kappa (1994), married to another Clemson grad. Our children have Clemson names: Tillman, our son, age 7 and Sloane, our daughter, age 9months.

French Toast Casserole

16 slices high quality white bread, cut into ½ inch cubes
8 ounces cream cheese, softened
8 large eggs
1 ½ cups skim milk
2/3 cup half-and-half
½ cup maple syrup
½ teaspoon vanilla extract
powdered sugar, for garnish
maple syrup, for garnish

• Place the bread cubes in a 9x13-baking dish that has been sprayed with nonstick cooking spray.
• Place the cream cheese in a large bowl and beat with electric mixer until smooth.
  
• Add eggs, one at a time, beating well after each addition.
  
• Add milk, half-and-half, maple syrup, and vanilla and beat until smooth.
  
• Pour over top of bread cubes, cover and refrigerate overnight.
• Heat oven to 350 degrees. Remove casserole and let sit at room temperature for 30 minutes.
  
• Bake for 50 minutes, until puffed and golden. Slice into individual servings and top each with a sprinkling of powdered sugar and a drizzle of maple syrup, if desired.

Makes 12 servings.

• This works well with fat free cream cheese
• Can also substitute heavy cream (whipping cream) for half-and-half
• May take as long as a full hour to cook thru, just check at about 45 mins into cooking
• I add a dash of cinnamon to the egg mixture for extra flavor :)
• Perfect to make ahead for Christmas morning, Easter morning, or Clemson tailgate!!

Fun games to play at your tailgate

Half of the fun of Clemson football games is tailgating - good food and good company - a chance to see old friends and sometimes make new ones. One of my favorite things to do while tailgating (besides eating and taking part in adult beverages) is playing outdoor games! There's nothing wrong with a little friendly competition with your fellow tailgaters.

Here is just a selection of some of my favorite tailgate games - easy to transport in the back of your car, and simple enough to play that even the kids can get in on the friendly competition.

Cornhole - this is a popular game among tailgaters..everyone has their own sets of rules, but the concept is still the same - get the bean bag in the hole! You can even get your own Clemson set.
Lasso Golf - Another tailgate favorite is lasso golf - the idea is to swing these strings, with a ball on each end, onto the rack so they wrap around the poles. I have yet to master this game...somehow I always overswing the strings and they end up wrapping around someone's chair at a neighboring tailgate. These fold up pretty easily for transport.
Bulls Eye Washers - This game is another fun tossing game that's easy to transport to the tailgate. However, this game is also great for when you're ready to kick back in your tailgate chairs after eating all day - set one of these up in the middle of your tailgate and let everyone take turns trying to get the washers in the middle.
Lawn Darts - If you like cornhole, you'll also enjoy lawn darts - or Jarts. With this game you will need to be tailgating on or close to a grassy area, and need a little extra space to spread out. Put the bulls eye ring a good distance away from your tossing point and each player takes turns tossing the safe, weighted tip darts to try and land them in the ring.


Horseshoes - And who could forget the classic outdoor tailgate game of horseshoes! Horseshoes are easy to set up, even if they are a little heavy. I love horseshoes...even though I'm not very good at it. :)
Tic-Tac-toss - Here's a fun spin on tic-tac-toe...toss the beanbags to try and get your letter, x or o, on the board. I think kids would have a ton of fun with this game - and it requires strategy along with skill.
Football - Not really any explanation needed here! You can't go to a Clemson game without seeing at least a dozen tailgaters tossing the football around.

Breakfast Tailgate Recipe: Sausage Swirls

Have you heard about the Clemson vs. Wake Forest game? Yup, that's right, another noon kick off...which means you may be serving breakfast at your tailgate next weekend. Here's a yummy (and really easy) recipe for Sausage Swirls that will fill your tailgaters tummies and give them a morning boost so they are ready to cheer on the Tigers at noon.

Sausage Swirls

1 - can crescent rolls
Hot or sweet mustard to taste
1 lb. - bulk sausage

• Open crescent roll dough, and while keeping dough together as much as possible, unroll and separate into 2 rectangular pieces
• Spread the mustard on top of both rectangular pieces
• Spread the sausage out on top of both rectangular pieces
• Roll up each rectangle length wise and refrigerate overnight
• Slice each roll and bake slices on cookie sheet covered with parchment paper at 350 degrees for 15 minutes

And... voila! Delicious breakfast treats for your Clemson tailgate! Mmm!

Orange and Purple Cauliflower for your next Clemson Tailgate

A fellow Clemson alum, Joan Breitenbruck Stepleton (Chemistry, Secondary Education double major, class of 2003) sent me this picture of orange and purple cauliflower. She saw this at a farmer's market in Denver. Wouldn't it be fun to have orange and purple cauliflower on your vegetable plate at your Clemson tailgate? :)

The man selling it said that the orange cauliflower grows wherever white can grow - so surely there must be orange cauliflower in South Carolina. Does anyone know where to find some in South Carolina?

Decorate Your Tailgate - Inexpensive accessories for your Clemson tailgate

Whether you set up a tailgate for two or for twenty, it's always fun to put a little extra effort into the decor - having a festive orange and purple tailgate setup will put anyone in the Clemson spirit. I was reading the August issue of RealSimple magazine last night, and found out about a Web site for party decor called PlumParty.com. I decided to check it out and found a lot of cute items and ideas that would make any Clemson tailgate stand out. These items would also make fun 'thank you for feeding me all season' gifts for the hosts of tailgates that you frequent.

First, stock up your tailgate with orange and purple plastic cups. PlumParty.com has 24 packs of 9 oz. cups made of heavy duty quality plastic for only $4.25. Scroll a little down on their site below the cups and you'll find links to other serving accessories in the identical color, like purple and orange napkins in packs of 50 for only $4.25. Pack a permanent marker and make sure you write everyone's names on the cups so they can use it the entire day - makes for less waste. Or buy some cheap orange or puple ribbon at Walmart and glue them around the bottom, middle, or top of each cup to create an additional flair (floozy cup?) and also help your tailgaters identify their cups.

PlumParty.com also offers some adorable placemats to jazz up your tailgate. Use a solid purple tablecloth and offset your spreads of food by placing them on these funky orange and white placemats. Finally, during the October and November games, the wind picks up quite a bit - how often are you scrambling after your paper plates? putting keys on top of your napkins to keep them from blowing away? Why not purchase some adorable photo frame paper weights. Print out cute pictures of your kids in their Clemson attire, or of you and your friends from past Clemson games, or even pictures from your Clemson glory days... and put them into this paper weight frame. You only need three or so - spread them out on your table to keep your tablecloth from blowing up. Put one on your napkin stack, another on your plates. These can be reused and pictures changed out the entire season!

Finally, I wanted to share another tailgate-must accessory. Plastic plates with built in cup-holders! You can find these at most party supply stores (Party City), or purchase them online, like from this Web site, cateringsupplies.com, who offers 16 of the plates in various colors for only $8.35. Unfortunately, this Web site doesn't have orange or purple... but white would work! Your tailgaters will love the convenience of these.

Easy to make Clemson tailgate recipes - Tiger Chow

Here's a sweet treat that your whole tailgate crew will love - simple to make and fun to munch on. Get your little Tiger cubs to help you make it and let them shake the bag.

Tiger Chow

12 oz. box of Crispix cereal
12 oz. package of chocolate chips
12 oz. jar of peanut butter
10 oz. box of powdered sugar

Melt chips and stir in peanut butter in microwave until smooth (about 2 minutes). Pour over cereal in a large bowl and stir to coat. Shake coated cereal in a paper bag with sugar. Store in an airtight container.
