Happy Hour - Cheers to the Weekend!


Frozen Berry Mango Daiquiri


Ingredients: (makes one drink)
  • 1 cup of cut up mango
  • 1 oz of raspberry margarita/daiquiri mix
  • 1 oz of fresh lime juice
  • 1 ½ oz of light rum
  • 1 ½ oz of Triple Sec
  • 2 tsp. of fine sugar or 2 packs of Splenda
  • Raspberries or cut up mangoes
  • Sparkling sugar
  • Lime wedge
  • 2 cups of ice

Directions:
  • Prepare your glass by wetting the rim with the lime wedge and dipping it in the sparkling sugar.
  • Place the cut up mango, rum, triple sec, lime juice, sugar and ice into your blender and blend to your desired consistency adding ice if necessary.
  • Place a third of the blended drink carefully into your glass and then pour a third of the raspberry Margarita/Daiquiri mix on top. Repeat with another third and then the rest.
  • Using a straw slowly and carefully stir the drink to create the desired red streaking throughout the drink.
  • Garnish with raspberries or cut of mango on the side along with a lime wedge on the rim.

Happy Hour - Firefly Dirty Fruit Tea

Sweet tea is a Southern beverage staple, and Firefly Sweat Tea Vodka is a South Carolina homegrown adult treat that puts a kick into the traditional sweet tea. Firefly shared this recipe and we cannot wait to try it! This would be a delicious (and easy-to-make) beverage for your Clemson tailgate or a sweet treat to sip on while you're lounging on your couch watching the games.

Firefly Dirty Fruit Tea

Ingredients:
1.5 oz Firefly Sweet Tea Vodka
3 oz pineapple juice
3/4 oz orange juice

Directions: Mix ingredients in a mason jar with ice, stir! Please drink responsibly!

Happy Hour - Solid Orange Sizzler


Solid Orange Sizzler Champagne Cocktail

Ingredients:
  • 8 oz. Champagne
  • 3 oz. Pomegranate Juice
  • 5 oz. Clementine Juice
  • 1.5 tbs of Limoncello
  • 2 tbs Lemon Juice
  • 2 tbs Simple Syrup
Directions: Combine clementine juice, pomegranate juice, lemon juice and Limoncello. Add in champagne and simple syrup. Serve immediately with ice. **Drink responsibly

Happy Hour - A Clemson Summer Frozen Daiquiri


A Clemson Summer Frozen Daiquiri

Ingredients:
  • 3 cups pitted, peeled, and sliced fresh peaches, frozen (thawed) unsweetened peach slices, or fresh or frozen unsweetened strawberries
  • 1/2 of a 12-ounce can frozen limeade or lemonade concentrate, thawed
  • 1/4 cup light rum or orange juice
  • 2 tablespoons powdered sugar
  • 2 to 3 cups ice cubes
  • Fresh peach chunks or small fresh strawberries (optional)

Directions: In a blender combine 3 cups fruit, limeade concentrate, rum and powdered sugar. Cover and blend until smooth. With blender running, gradually add ice cubes through opening in lid until mixture is desired thickness. If you like, garnish with peach chunks or small fresh strawberries thread on wooden skewers. Makes 6 to 8 (4- to 5-ounce) servings.

Happy Hour - Clemson Celebration Peach Champagne Cocktail

Happy, happy New Year Clemson Girls! I am still so excited about our New Year's Eve win - and even though the New Year's Eve celebrations have come and gone, I still feel like celebrating, how about you?

Remember when the Chick-fil-a Bowl was the Peach Bowl? Did you know Clemson has been to the Chick-fil-a (Peach) Bowl more than any other team?

Try this delicious Peach Champagne cocktail that uses peach sorbet...yummy!


Clemson Celebration Peach Champagne Cocktail

Ingredients:
1/4 cup sugar, to rim glasses
1 pint peach sorbet
1 1/2 shots Triple Sec
1/2 shot cognac, such as Courvoisier
Chilled champagne or sparkling wine, to fill blender, 2/3 bottle
Raspberries and 4 springs mint, optional garnish

Directions: Dip the glass rims in water and then the sugar. In a blender, combine all above ingredients and pulse till smooth. Pour and enjoy, garnishing with mint and/or raspberries if desired. Please drink responsibly...

Happy Hour - Pineapple Upside-down Cake Cocktail

Today's Wedding Wednesday post is unfortunately going to be postponed until next week.

And the combo of a yucky weather day and all of these rumors swirling about losing coaches, players, recruits, etc., I think I may just treat myself to a cocktail - will you join me? :)

I'm going to close my eyes, sip this, and pretend I'm sitting on the beach in 80 degree weather.


Pineapple Upside-down Cake
Quick and easy... 2 parts* pineapple juice, 1 part cake vodka, splash of Amaretto and splash of grenadine. Don't forget the cherry on top!

*Part: "Part" means any amount you want. It could be 1 ounce, 1/2 ounce, 2 ounces, 1 cup or any other amount you want. It all depends on how big you want your drink to be. **Remember, please drink responsibly!

Happy Hour - Clemson Champagne Cocktail


Clemson Champagne Cocktail
Serving Size 1 (multiply recipe for more)
  • Champagne
  • 1 ounce freshly squeezed orange juice
  • ½ ounce Vanilla Simple Syrup (see recipe below)
  • ½ ounce Campari
  • Freshly grated orange zest
Directions: To a champagne flute add orange juice, Vanilla Simple Syrup, Campari, and orange zest. Top with champagne and gently stir.

Vanilla Simple Syrup Recipe (make at home before you leave for game)

  • ½ cup sugar
  • ½ cup water
  • 1 whole vanilla bean (seeds scraped out)
Combine water, sugar, vanilla bean and seeds in a medium saucepan. Boil until sugar has dissolved, stirring frequently. Let sit for at least one hour. Let cool, strain and store in refrigerator (or your cooler!).

Happy Hour - Tiger Tangerine Sparkler

Try this refreshing cocktail instead of the traditional mimosa at your next morning tailgate. Yum! P.S. Drink responsibly...


Tiger Tangerine Sparkler
Serving Size: 4

2 ounces orange liqueur, such as Grand Marnier

8 ounces tangerine juice

12 ounces sparkling wine, chilled

4 tangerines, sections for garnish

Directions:
  1. Divide the orange liqueur and tangerine juice among 4 champagne flutes.
  2. Top with the sparkling wine and garnish with a tangerine section.

Happy Hour - Tiger Tangerine Margarita

TGIF! Are you as glad as I am that this rainy week is over? Try out this refreshing adult beverage to celebrate and 'pin' the recipe to use for a future tailgate or game viewing party. P.S. Drink responsibly...


Tiger Tangerine Margarita

3 ounces freshly squeezed tangerine juice

2 ounces silver tequila

1 ounce triple sec

Directions:
  1. Salt rim of glass. Rub rim with a piece of citrus and dip into a shallow plate filled with coarse salt or for a blingy rim, dip rim of glass into blue curacoa, then dip into salt
  2. Fill your cocktail shaker with ice and add all ingredients and shake it.
  3. Strain into a glass filled with ice and garnish.
Tips: You can salt rim up several glasses in advance if you’re planning on making several margaritas. If you don’t like salt, try (purple!) sugar…

Happy Hour - Solid Orange Sipper

Two years ago we posted a delicious orange cocktail recipe perfect for your Clemson tailgate. Recently we've seen it pop up all over Pinterest, so we decided to hunt down another refreshing cocktail recipe that would be easy to make and serve at your tailgate. Sip responsibly and enjoy!

Solid Orange Sipper

3 ounces freshly squeezed orange juice
3 ounces cranberry juice
1 1/2 ounces orange-flavored vodka
1 1/2 ounces Cointreau (Cointreau is made from 100% natural ingredients and a meticulous selection of bitter and sweet orange peels)
3 cranberries, for garnish
1 orange twist, for garnish

  • Combine all the ingredients and shake with ice.
  • Strain over finely crushed or shaved ice in a Collins glass.
  • Garnish with the cranberries and orange twist.
