Happy Hour - Solid Orange Sipper

Two years ago we posted a delicious orange cocktail recipe perfect for your Clemson tailgate. Recently we've seen it pop up all over Pinterest, so we decided to hunt down another refreshing cocktail recipe that would be easy to make and serve at your tailgate. Sip responsibly and enjoy!

Solid Orange Sipper

3 ounces freshly squeezed orange juice
3 ounces cranberry juice
1 1/2 ounces orange-flavored vodka
1 1/2 ounces Cointreau (Cointreau is made from 100% natural ingredients and a meticulous selection of bitter and sweet orange peels)
3 cranberries, for garnish
1 orange twist, for garnish

  • Combine all the ingredients and shake with ice.
  • Strain over finely crushed or shaved ice in a Collins glass.
  • Garnish with the cranberries and orange twist.

Tailgate Recipe - Crockpot Chocolate Candy

This recipe will make you the hero of the tailgate - it's so easy to make and is a sweet treat everyone will enjoy. Prep the day before, let cool overnight, and it's ready to be packed up and go the next morning.


Crockpot Chocolate Candy

1 package dry roasted salted peanuts (16 oz.)
1 package unsalted dry roasted peanuts (16 oz.)
1 package semi-sweet chocolate bits (about 12 oz.)
1 German chocolate bar (4 oz.)
32 ounces white almond bark (I couldn't find white almond bark in my local grocery store, so I just used 1 to 2 packages of 6 oz. white chocolate baking squares - tasted just as good, if not better)

Directions:
  1. With crockpot off, pour both packages of peanuts into the crockpot.
  2. Next add all of the other ingredients. Push some of the chocolate squares into the peanuts and towards the bottom.
  3. Cook in crockpot on the LOW setting for 2 hours. Check after an hour and go ahead and stir what has already melted into the peanuts. (I had to cook a little longer than 2 hours to ensure everything was good and melted - it depends on your crockpot.)

  5. Cover a few baking sheet pans with wax or parchment paper (pans are optional if you opt to use your countertop for cooling - see step 5). Next scoop out small spoonfuls of the melted peanut-chocolate goodness out of your crockpot and place on the paper covered baking sheets.

  7. Let the candy clusters cool - either on your countertop overnight, or stick in your fridge for faster cooling (ready in just a few hours).
  8. When cooled, remove candy clusters from wax paper, place on a plate and enjoy!

Clemson Spring Game Weekend - Orange & White game & other events

This weekend will be the annual Clemson Spring Orange & White game. Admission and parking are free, so if you don't yet have weekend plans, I highly recommend you go. It's a great weekend full of events (in addition to checking out this year's football team), and it's a great way to spend a weekend with your family in Clemson without the massive crowds, traffic, outrageous hotel prices, etc.

There are a number of events taking place this weekend in Clemson, in addition to the Spring game, that you and your family can take part in.

Friday, April 13
  • 10:00 AM - until - Clemson Literary Festival - book fairs, readings, live music, etc.
  • NOON - 4:00 PM - Horticulture Student Plant Sale @ Greenhouse at the back of the Biotechnology Research Complex (across the parking lot from Hendrix Student Center)
  • 6:30 PM - Clemson baseball vs. NC State @ Kingsmore Stadium (purchase tickets)
  • 7:00 PM - Christopher Branch concert @ the Amphitheater (admission is FREE) - "A powerhouse singer/songwriter who takes his cues from his South Carolina forerunners Edwin McCain & Hootie & the Blowfish, but also lets his own simplistic, unique songwriting shine through..."
Saturday, April 14
  • 11:00 AM - Women's Tennis vs. Wake Forest @ Hoke Sloan Tennis Center (free admission)
  • 11:00 AM - 3:00 PM - Be a T.I.G.E.R! Field Day @ Lawn of Littlejohn Coliseum (event details)

Clemson jelly bean Easter centerpiece

How cute (and easy) is this jelly bean Easter centerpiece? Use fake flowers, or use real flowers by placing a smaller vase with water in the middle and filling in the gap between the two vases with jelly beans. Switch out the green jelly beans with purple jelly beans -- or a combination of orange and purple.
